This blend is rich with flavors from the Pacific Rim. We start with an Asian-inspired combination of mild curry and lemongrass, and round it out with Indian coriander, thyme, and marjoram. The result is a versatile seafood rub that shines. We love Pacific Seafood on everything from scallops to salmon and also enjoy it as a base for a warm vinaigrette on roasted vegetables or in a marinade for flank steak.

Pasilla Negro

The heat level of Pasilla Negro is moderate, and the depth of flavor is vast. One of the darkest and richest chiles available, the grapish, winey character is delicious. One of the "holy trinity" used in moles, Pasilla Negro can also be incorporated into salsas, soups, and stews.

Pasilla Oaxaca

Pasilla Oaxaca

With its stronger smoky flavor and more intense heat, we often call Pasilla Oaxaca “the chile a Chipotle wants to be when it grows up.” Pasilla Oaxaca chiles are only grown in the hilly Oaxaca region of southern Mexico — because of this, they are a rare and much sought-after addition to the spice pantry. They have a strong smoky character, a hint of fruit, and a heat level that is pure and sharp. Pasilla Oaxaca imparts rich flavor, pungent bite, and striking meatiness to Latin style bean dishes, dips, soups, moles, and more.

Pink Curing Salt

Pink Curing Salt

Cured meats are easy to make at home if you have the right stuff, and that means curing salt. Also known as Pink Salt, Prague Powder #1, or TCM (tinted curing mix), curing salt is used to inhibit the growth of bacteria in preserved meats, while keeping color and flavor intact. The addition of 6.25% sodium nitrite is the key. Just don’t use it on the table!
