Bengali Five Spice is almost always used whole, bloomed in hot oil or ghee. Heat the oil until it shimmers, drop in a spoonful of seeds, and wait for the sputter and pop. Berbere is a traditional blend from Ethiopia and Eritrea. The flavors are robust and feature a range of spices. The combination of heat from ginger and chiles alongside aromatics like cardamom, cinnamon and nutmeg make this unusual mix a power-house of flavor.  Traditionally used to season the various lentil stews called wats, it can also be used as a rub on chicken and lamb. Berbere has a wonderful flavor affinity with tomato, so try it in your favorite recipes for tomato based soups or chili.

If you are looking for your next tabletop stunner, look no further. Butterfly Pea Flower infuses easily into water for tea, alcohol or syrups for cocktails and desserts and even soups and sauces. The color ranges from intense blue with plain water to lavender and pink depending on the acidity level of the infusion, the sky's the limit with this one! The flavor is mild, neutral and slightly grassy so it is easily overcome by whatever flavors you put with it, but the color remains simply stunning. Brewing Instructions: Use 2-3 teaspoons per cup at 210° for 5-6 minutes
