Black Salt
Not a true salt, Black Salt (also known as kala namak) is actually a complex mineral compound with a rich sulfur content—this stuff stinks until you cook it. The sulfurous odor hits quickly and then dissipates to leave a deep, mineral salt taste. Perfect with seafood and in masalas from the Indian subcontinent. Also really good sprinkled on steaks... really.
