Galangal Powder
Galangal is ginger's more aromatic, more floral cousin. It has the same zingy sharpness but with notes of pine, citrus, and white pepper that are entirely its own. It's essential in Thai curries (especially tom kha gai and tom yum), Indonesian rendang, and Malaysian laksa, where it adds layers of complexity that regular ginger just can't match. Use Galangal Powder in curry pastes, marinades for grilled meats and seafood, or stir-fries where you want authentic Southeast Asian aromatics. You can also add it to broths and sauces for that elusive note that makes you wonder "what IS that flavor?" A little goes a long way, so start with small amounts and build from there.
