With a hint of citrus and a base of kosher salt, this blend will add heat and serious flavor to just about anything. For the serious chile-head, this may very well replace black pepper at your dining room table. The bold flavor of Habanero Garlic Pepper is delicious rubbed or sprinkled on any cut of meat. You can also use it as a sprinkle on anything from popcorn to baked potatoes.

Harissa

Harissa is popular throughout North Africa and is used liberally in their cuisine. The blend is robust with rich flavors, a hint of citrus, and chile heat. The heat level of Harissa blends varies depending on who is doing the mixing—ours is right in the middle of the road.  Harissa can easily be made into a paste by whisking the spices with hot water, olive oil, and a squeeze of lemon. This makes an all purpose condiment, that graces the regional table as a bottle of Tabasco might in this country. Harissa is delicious with grilled chicken or lamb. A staff favorite at the spice shop we use it in everything from beef chili to vegetable barley stew.

Hawaij

Hawaij is essential to the cuisine of Yemen and is also very popular in Israel. In both countries, it is used liberally as a rub prior to grilling meat, poultry, seafood, and vegetables like eggplant. It is also used as an all-purpose seasoning and may end up in just about anything from soups and stews to sauces and rice. The Beduoin of the Sinai even use it as dip, like Dukkah, for fresh bread.

Herbes de la Garrigue is named for the sun-baked scrubland of southern France where these Mediterranean herbs grow wild. We've built on the traditional Provençal herbs—thyme, savory, basil, marjoram—to create something more assertive and unrefined. Piney, earthy, and herbal, with peppermint that opens up the other flavors and fennel seed that anchors everything with a subtle sweetness underneath. The easiest place to start? Rub it on lamb, chicken, or pork before grilling or roasting. Also excellent in focaccia or rustic breads, stirred into white beans, or sprinkled over roasted vegetables with olive oil.

Hibiscus

Tangy and subtly sweet, Hibiscus flowers are commonly used in teas and infusions. Almost cranberry-like in flavor, with a rich, deep red color, Hibiscus shines as a refreshing ice tea, agua fresca, or infused in simple syrup for cocktails such as a Hibiscus Margarita or Tangy-Tart Cosmo. Traditionally, steeped petals are added to sauteed onions in tacos and enchiladas. Hibiscus is also used in sauces and marinades, especially for game, and in all manner of deserts including cakes, meringues, and tea cookies. Brewing Instructions: Steep 2-3 teaspoons per 8oz cup at 210°F for 5-6 minutes

Mined from a Jurassic-era salt deposit in the Himalayan Mountains, our Himalayan Pink Salt contains 84 beneficial trace minerals, which give it its distinct mottled pink and white coloring. The minerals add to the flavor as well, making it wonderfully complex. The extra coarse chunks in this salt can be ground in a mill or crushed in a mortar and pestle for a variety of textures.

Hojicha Powder

Hojicha is a roasted green tea that is finely milled to perfectly dissolve into your culinary creations. Rich, creamy lattes and tea-infused desserts will be at your fingertips! Produced in the famed tea growing region of Kyoto, the tea leaves are harvested and carefully steamed, rolled, and dried. Then they are expertly roasted to bring out the distinct notes of cocoa and earthy undertones that distinguish this smooth and nutty Japanese tea. Each hex jar contains 12 grams of Hojicha. (12 g ≈ 2 1/2 tsp) Warm Brewing Instructions: Whisk 1 teaspoon of Hojicha powder in 8 ounces of 175° F water until dissolved. Enjoy as is or add steamed milk or sweetener to taste.  Cold Brewing Instructions: Whisk, shake, or froth 1 teaspoon of Hojicha powder for every 6 ounces of liquid. Sweeten, ice, or add milk to taste.

After years of being asked for Huacatay, we can finally say yes! This unusual herb from the Peruvian Andes is traditionally used in South American cuisine, and we're thrilled to be offering this rare find. Ours is organically grown in California and it can be used as an herb in cooking or made into a beautiful and delicious herbal tea. Huacatay, pronounced “wah-ka-tay” is also known as Peruvian black mint, mint marigold, wild marigold or Mexican marigold. The flavor and aroma are strong, with intense notes of sweet basil, tarragon and lime. Our first taste of the tea was quite heady! And it brews up a beautiful chartreuse.
