Pequin
This tiny chile tips the hotter end of the scale and has a searing, full mouth heat with a mild tang. Use pequin chiles anywhere a healthy dose of heat is called for—in soups, stews, salsas, and bean dishes. Pequins make a nice addition to the pickle jar, and can be used to make infused chile oil.
