Toss hot noodles with plenty of butter and a heavy shake of Osaka Seasoned Salt. It is mostly sesame and salt, with seaweed, lemon peel and a little Korean chile behind them, so you end up with a plain bowl that tastes nutty and savory with a bit of heat. Good on rice and on soba for the same reason.

For a quieter bowl, use Poppy Seed instead, with a good pinch of salt. Buttered noodles with poppy seed is a Central European supper people have been making for a very long time, and you get a mild crunch against the butter. Some versions add sugar. Try it once before you decide which side you are on.
