About this Recipe

@Rosie G. calls milk such an extraordinary ingredient, and after years of making cheese she still finds it breathtaking that it can be turned from a liquid into a solid. One of its best qualities is how readily it takes on flavour, so here are her two ways of putting spice into it.

The hot method is quick. You bring the milk to a boil, turn down the heat, and let the spices simmer in it for five minutes.

The cold method needs nothing but a jar and a day in the fridge, and it works with plant-based milk too. Once the milk is strained, use it in whatever you're making.

You can use a wide range of spices, flowers, and teas with milk. Some suggestions to get you started include Madagascar 3-Count Vanilla Bean, Roses, Midnight Berry Tea for a sweeter touch, and for savory flavors, try Herbes de la Garrigue, Smoked Sweet Paprika, Saffron, or combine Turkish Bay Leaf and White Peppercorn.

Instructions

Hot Method

1

Heat the milk in a saucepan.

2

Gently bring to the boil.

3

Reduce the heat and add your herbs or spices.

4

Leave to simmer for 5 minutes.

5

Remove from the heat and leave to cool.

6

Strain the milk and then use.

Cold Method

1

Combine the milk and your chosen flavouring in a clean, airtight glass jar.

2

Seal the jar tightly and shake it gently to mix the ingredients.

3

Refrigerate for 12 to 24 hours, shaking the jar occasionally.

4

Strain out the solids using a fine-mesh sieve or cheesecloth.

5

Store the strained milk in the fridge.

Notes & Tips

  • For the cold infusion, tea can steep for 12 to 24 hours, and vanilla or flowers can go the full 24.
  • A fine-mesh sieve catches whole spices; use cheesecloth for tea leaves, zest, or petals.
