Cooks Club

I was introduced to pepparkakor (Swedish ginger thins) by a coworker a couple of years ago, and I've been fond of them ever since. They're wafer thin, crispy, and barely sweet, and carry with them an actual bite. While I refuse to make wafers at home (If I'm not being paid to babysit cookies that so badly want to burn, I'm not going to do it), I have found a up the kick of your classic holiday gingersnap. The trick? Vietnamese Black Peppercorn, Long Pepper, and fresh ground Jamaican Allspice. A lot of recipes count on the ginger powder to do most of the work with flavor, and yes, it should, but to get that sharp bite of the ginger thins, ginger powder itself just doesn't cut it. I like the vietnamese peppercorn because I find it to be the sharpest, and has an almost lemony flavor, the long pepper adds a bit of pine, and the Jamaican allspice adds a lovely, complex warmth.
