My mom was a good cook but simple. Oher than staple pantry items like canned tomatoes or beans nothing ever came from a box or a can and we always ate dinner as a family . One thing I always looked forward to was her spaghetti (I didn't know that was just the name of the noodle till I was an adult) she had a friend who emigrated from Italy in I believe the ealy 70s who taught her how to make this. I have been making it almost the same way since I moved out of the house in the early 90s its basically the same as the recipe in Marcella Hazans Classic Italian cooking the only things I have changed since getting that cookbook is i put finely diced carrot and celery in it now my mom just put a whole carrot in it wich I never liked as a kid if the carrot ended up on my plate I was expected to eat it nothing was tossed out. She made this dish a lot in the winter and I was always happy when I smelled it on the stove when I came home from school. Also if you have one on hand always put a parmesan rind in the sauce while you cook it .
All clad was my go to for years my local kitchen store could no longer carry them because they now have min order size for stores that wish to carry them so they stated carring Demeyer I believe they are owned by Henkles they make a compareble product but I still love my all clad its usually just the fry pan that eventually needs replacement due to heat warp no matter how careful I am.
My wife likes the rosemary salt , garlic powder is good I like popping it in a Dutch oven on the stove top in lard and topping it with salt and smoked paprika.
My favorite is twice baked. I use med size potatoes something with a thin skin like a red potatoe. i grease a sheet pan then dip the potatoes in salt water and put on sheet pan and bake at 425 for 45 min-1 hr. When the potatoes are tender pull them out and smash them down till they are maybe half an inch thick then coat with melted butter, ghee or if you have it rendered duck fat is the best. You can top just with salt and pepper or you can use World spice rosemary salt or fresh rosemary or paprika , garlic powder is good also really anything you like with potatoes. Then throw it back in the oven and cook 15-30 min till the edges of the potatoes are crisp. Air fryer can speed the 2nd cook a little or even just convection setting if your oven has it.
