Dateline 1992-ish somewhere in Maine on our way to the legendary Common Ground Fair. My young daughter and I stayed at a B&B (that’s before the word “Air” preceded the B&B part). Breakfast was served in a big farmhouse dining room. Our eyes grew wide as a baking dish was brought to the table and in it was what I can only describe as a dramatic, puffy deliverance of wonderfulness, complete with warmed maple syrup on the side (the real stuff) that stuck nicely to the crispy edges. I got the untitled recipe which soon came to be known in our house as Puffy Pancakes. It’s still a crowd pleaser.
Instructions
Preheat oven to 425°.
Melt butter in a 9x13 pan.
Mix flour, milk and eggs.
Batter will be slightly lumpy.
Pour batter into pan over melted butter.
Bake 15-20 mins.
