Cooks Club

Every once and a while you end up with an overabundance of fresh herbs threatening to go brown and slimy, and this is one of the best things to do with them to prevent that from happening. Take your fresh herbs and a large grain sea salt (I use Italian Sea Salt but a large-grain kosher would also work well), and put them in a food processor or blender until desired texture is reached (it will sound like you are attempting to grind rocks). Then spread out in a thin, even layer on a sheetpan and bake at the lowest temperature your oven will allow (mine is 200°), and bake, stirring occasionally, until the mixture is completely dry.

-Mint seasoned salt makes a great cocktail rim.

-Chive and dill seasoned salt is excellent for eggs

-Doing this with cilantro will make some friends go "why would you do this to me" and other friends go "wow, this is great!"
