Pickle soup is a favorite and I've given out my recipe for it many times... You are missing a bet if you don't include some Cascade Mushroom Mix (a Tablespoon or more) and a dash or two of Rose Harissa. I don't have Elliott Bay Seasoning, but use herbs including thyme, oregano, etc. and GARLIC! This changes to non-vegan, but adding a bit of cooked chicken or, even better, diced Polish sausage, makes this a hearty dinner.
