Instructions

Combine lamb, grated onion, garlic, parsley, mint, and all spices in a large bowl. Mix well with your hands. Season generously with salt and pepper.

Refrigerate mixture for 30 minutes to allow flavors to meld.

Make tahini sauce: Whisk tahini with lemon juice, minced garlic, and enough water to reach a drizzling consistency. Season with salt.

Divide meat mixture into 12 portions. Form each around a metal skewer in an elongated oval shape.

Preheat grill to high heat. Grill kofta for 3-4 minutes per side until charred and cooked through.

Serve kofta on warm pita bread, drizzled generously with tahini sauce, alongside fresh tomatoes, cucumber, and pickled vegetables.
