Instructions

Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, cook until softened, about 8 minutes.

Add garlic, cumin, paprika, harissa, and cayenne. Stir for 1 minute until fragrant.

Pour in crushed tomatoes. Season with salt and pepper. Simmer for 10 minutes until slightly thickened.

Make 6 wells in the sauce. Crack an egg into each well.

Cover and cook on medium-low for 8-10 minutes until egg whites are set but yolks are still runny.

Sprinkle crumbled feta over the top. Garnish with fresh parsley.

Serve immediately, straight from the pan, with crusty bread for dipping.
