About this Recipe
This Southern-style lemon sweet tea ice pop is pure nostalgia in frozen form. The robust Jorhat Assam tea is the perfect counterpoint to the bright, citrusy lemon. Pour this elixir into a classic Solo cup, and you've captured the essence of a lazy summer day. It's simple, refreshing, and satisfying.
Instructions
1
Place the loose leaf Jorhat Assam tea into a teapot or heatproof pitcher. Pour 2 cups of boiling water over the tea leaves. Let it steep for 5 minutes.
2
After steeping, use a fine mesh strainer to pour the tea into a mixing bowl or another pitcher, removing the tea leaves.
3
Stir in the granulated sugar while the tea is still warm, until dissolved.
4
Add the fresh lemon juice to the sweetened tea and mix until well combined.
5
Pour the mixture into Solo cups, filling them about 3/4 full.
6
If desired, float a slice of lemon on top of each cup for garnish.
7
Insert wooden sticks into the centers of the Solo cups.
8
Place the cups in the freezer. Freeze for at least 4 hours or until completely solid.
9
To remove the ice pops from Solo cups, run warm water briefly around the outside of the cup to loosen them.
