Instructions
1
Pat the chicken thighs dry with paper towels to ensure a good sear.
2
In a bowl, mix the Poultry Rub and Pacific Flake Sea Salt. Season both sides of the chicken thighs with this mixture.
3
In a large skillet or braising pan, melt the butter over medium-high heat.
4
Add the seasoned chicken thighs to the pan, skin side down. Sear for about 4 minutes until the skin is golden brown and crispy. Flip the thighs and sear for an additional 3 minutes.
5
In the same pan, add onions and apples and sauté for a couple minutes until wilted.
6
Add the grainy mustard and apple juice to the pan and let the mixture come to a simmer.
7
Reduce the heat to medium-low. Cover the pan with a lid and let the chicken and apples simmer in the flavorful liquid for about 25-30 minutes. The chicken should be fully cooked and tender.
8
For a thicker sauce, increase the heat to medium-high and let the braising liquid in the pan reduce for about 5-7 minutes until it thickens, pour the reduced sauce over the chicken and apples to serve.
