Instructions

Place pork chunks in a Dutch oven. Add orange juice, lime juice, onion, garlic, bay leaves, cumin, oregano, salt, and pepper.

Add just enough water to barely cover the pork. Bring to a boil, then reduce heat to low.

Cover and simmer for 2.5-3 hours until pork is fall-apart tender and most liquid has evaporated.

Remove lid and increase heat to medium. Let the pork fry in its own rendered fat, turning occasionally, until edges are crispy and golden, about 20 minutes.

Shred the pork with two forks, mixing in some of the crispy bits.

Serve in warm corn tortillas with salsa verde, diced onion, cilantro, radishes, and lime wedges.
