Instructions

Roast tomatillos, serranos, onion, and garlic under the broiler until charred, about 10 minutes, turning once.

Blend roasted vegetables with crema, chicken broth, cilantro, and salt until smooth. This is your salsa suiza.

Heat oil in a skillet. Quickly fry each tortilla for a few seconds per side to soften. Drain on paper towels.

Spread 1/2 cup of salsa suiza in the bottom of a 9x13 baking dish.

Fill each tortilla with shredded chicken and a sprinkle of cheese. Roll and place seam-side down in the dish.

Pour remaining salsa over the enchiladas and top with remaining cheese.

Bake at 375F for 20-25 minutes until bubbly and cheese is golden. Let rest 5 minutes before serving with extra crema.
