Instructions

In a medium skillet, fry the bacon slices until crispy. Drain on paper towels and set aside to cool.

In a medium bowl, combine the sour cream, lemon juice, and Tar Heel BBQ Rub. Stir until smooth and set aside.

Chop up the bacon into pieces.

Trim the stem and peel off the outer leaves of the iceberg lettuce and discard.

Cut the iceberg in half right through the middle and set on the plate, cut side facing up.

Spoon a generous amount of the dressing over each wedge and sprinkle on the tomatoes, salt, cheese, and bacon.
