Instructions

Add the sugar and water to a small saucepan over medium heat. Stir until sugar is dissolved and bring to a boil. Remove from heat and stir in the rose petals. Cover tightly.

Steep the petals for 15 minutes and strain the syrup through a fine mesh strainer. The roses absorb a lot of the liquid, so make sure to squeeze out the flavor.

Let cool, then pour into a glass jar and seal tightly with a lid.

This syrup will keep refrigerated for about one month. Use it to sweeten coffee, tea, lemonade, cocktails or brush on a lemon pound cake.
