About this Recipe

Despite its name, which means "four spices" in French, this blend never seems to keep strict count on the number of its ingredients. Quatre Epices can be used in both savory and sweet dishes. Often included in paté, forcemeat and sausage making, it is equally at home in gingerbread or cake, such as in this delicious French Quatre Epices Cake, as seen in Sunset Magazine.

Instructions

In a small bowl, thoroughly mix all of the spices together. This will keep in a jar with a good rubber seal for a few months. For even fresher flavor, keep the cloves, black pepper and white pepper whole. Mix them in with the ground nutmeg, mace powder and cinnamon and store in a jar. You can then grind however much your recipe calls for when you need it.
